What's Santi eating?

So I've had some success with a few recipes that Santi really loves. For anyone who has a toddler, when you find things like this, you make them as much as possible! So I thought I'd share here on a few that are his favorites!

Banana Bread/Muffins


Ingredients:
2 cups all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup butter
1/2 cup brown sugar
2 eggs, beaten
3 overripe bananas

Directions:
1. Preheat oven to 350 degrees. Lightly grease a loaf pan (or muffin tins if you are making muffins).

2. In a large bowl, combine flour, baking soda and salt. Add butter (room temp or I pop it into the microwave for about 15 seconds to soften it up) and brown sugar and mix well. Add eggs and bananas (mash them up a bit if they need it) and mix until well blended and the ingredients are nice and wet. Pour batter into loaf pan or muffin tins (this makes 24 mini muffins and 6 large muffins if you want to mix or 16-18 large muffins.)

3. For bread loaf: Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

For muffins: Bake in preheated oven for 20-23 minutes, until a toothpick inserted into center comes out clean. Let cool for 10 minutes and then place on wire rack to completely cool.

Spinach Meatballs

Serves: 6   Serving Size: 4 meatballs

Ingredients:
½ cup egg substitute or 2 egg whites
¼ cup Parmesan cheese
½ cup whole grain bread crumbs
¼ tsp. garlic powder
¼ tsp. ground black pepper
1 (10 oz.) package frozen chopped spinach, thawed and well drained
1 lb. lean ground turkey

Directions: In large bowl, combine all of the above ingredients until well blended. Shape into 1 ½” meatballs. Spray nonstick pan with cooking spray. Brown meatballs on medium high heat. Keep moving meatballs so they are brown on all sides. Cook on low for about 15 minutes or until cooked through. Serve with 1 cup of whole wheat pasta and sauce if desired.
